a few strands of Saffron
100 ml white wine
250 ml of fish stock
1 tablespoon flour
2 tablespoons of olive oil
1 large carrot sliced
100 g frozen peas
Peel the garlic and the onion, chop them and put them in a pan with a little oil. Poached and when it starts to Brown add the saffron, salt and flour, mareamos for a minute and add the wine.
Meanwhile in a small saucepan put the stock of fish with carrots and peas, Cook for 10 minutes and add the loins of hake in the fish stock, let boil about 5 minutes and turn off the fire.
We got the fried and put it in the bowl of the mixer along with the broth to cook hake. We beat to get the texture that we like.
Now assemble the dish
We put the hake on the plate a few peas and carrots and sprinkle with the sauce. This dish I like to accompany it with a basmati rice to which I put some shrimp and some garlic to cook it to give more flavor.
