Antioxidant Quinoa Salad
We bring you a super antioxidant salad, a very fresh recipe for the hottest days, those who crave fresh and healthy food.
- ✴️ Ingredients 4 people✴️
200 g quinoa
2 tbsp. fresh parsley
150g courgette or pumpkin
Ground ginger
75 g blueberries, raspberries or grapes
Salt
½ onion
Pepper
1 garlic
Olive oil
30 g walnuts
Raspberry vinegar
〰️✴️ Preparation ✴️〰️
1. Cook the quinoa with double the amount of water, a little salt and set aside. Preheat the oven to 200 ºC and roast the diced courgette or pumpkin, chopped onion and garlic for about 15 minutes, with a little oil and salt. Set aside.
Add the drained quinoa, chopped walnuts, chopped fresh parsley, ground ginger, cranberries, a little salt and pepper to a bowl. Add the roasted vegetables and dress with extra virgin olive oil and vinegar.
Now we have our Antioxidant Salad!
