Paella with rabbit and artichokes

Enjoy authentic recipes from the Valencian community: Alicante rice, rabbit and artichoke paella.

Exquisite dish for the most demanding rice lovers. The Valencian Community has a wealth of rice recipes. So much so that in each of its three provinces (Valencia, Castellón and Alicante), we have discovered countless ways to prepare this dish. To do so, we went to the heart of Alicante to rescue one of the most typical rice dishes of Levante: the Alicante rice with rabbit and artichokes. A traditional dish that will surprise your guests.

Ingredients

For 4 people:

  • 400 gr. of rice
  • 400 gr of rabbit in pieces
  • 2 artichokes
  • Saffron a pinch
  • 800 ml. of water
  • 100 gr grated tomato
  • 180 ml of olive oil
  • 100 gr of red pepper in strips
  • 2 cloves of garlic
  • 1 sprig of parsley
  • A few strands of SAFFRON
  • Natural salt and thyme
  • 1 lemon

Preparation of rabbit and artichoke paella

  1. We put half of the oil in a frying pan, cut the pepper into strips and fry it. We reserve it for the end to decorate the paella.
  2. We clean the artichokes: we cut them into 8 pieces each and fry them in the oil from the peppers. We set them aside.
  3. In the remaining oil, fry the rabbit with a little salt and thyme. Meanwhile, heat the water in a pot. When the rabbit is well fried, put it in the pot with the water. Let it cook for at least 15 minutes.
  4. We put the paella on the heat with the other half of the oil and the grated tomato, we fry it and add the saffron, the chopped garlic and the parsley. We put the rice and we keep stirring so that it doesn't burn, when the rice turns a little white we add everything that we have in the pot and the reserved artichokes.
  5. We measure the broth, we have to put 800 ml. of hot broth.
  6. From this moment we count 13-14 minutes, we taste it for salt and correct it.
  7. Just after turning off the heat, we decorate with the fried red pepper and pour the lemon juice on top.

We take off the heat and wait a bit…

All that remains is to let the paella rest for 10 minutes and it's ready!

You can serve it now or, as the people of Alicante do, eat it directly from the paella pan 🙂
